Famous Belize Stew(ed) Chicken Recipe

Belizean Stew Chicken is a popular dish in Belize, often served with rice and beans, fried plantains, and coleslaw. Here’s a recipe for making Belizean stew chicken:

Ingredients:

  • 3 lbs chicken (breast and thigh mixture is preferred), cut into small pieces
  • 1/4 cup vegetable oil
  • 1/4 cup white vinegar
  • 1 onion (yellow or white), diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 tomatoes, diced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 cup cilantro, chopped
  • 2 cups water

Directions:

  1. Season the chicken pieces with salt, black pepper, paprika, cumin, and oregano. Rub the seasoning into the chicken and let it sit for at least 30 minutes.
  2. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  3. Add the chicken to the pot and brown on all sides, about 8-10 minutes.
  4. Remove the chicken from the pot and set aside.
  5. Add the diced onion to the pot and sauté until translucent, about 3-5 minutes.
  6. Add the minced garlic and diced bell pepper and sauté for another 2-3 minutes.
  7. Add the diced tomatoes and continue cooking for another 3-5 minutes.
  8. Return the chicken to the pot and add 2 cups of water and 1/4 cup of white vinegar. Stir to combine.
  9. Bring the mixture to a boil, then reduce the heat to low and let the chicken simmer for about 30 minutes, or until the chicken is tender and cooked through.
  10. Add the chopped cilantro and simmer for another 5-10 minutes.
  11. Serve the stew chicken hot with rice and beans, fried plantains, and coleslaw.

This recipe can be made in a crockpot (slow cooker). For best results, cook on low for 6-8 hours.
