How to Make Belize Salbutes at Home

Salbutes are a popular snack food in Belize, typically made with a fried tortilla topped with shredded chicken, cabbage, tomato, and avocado. Here’s how you can make Belizean salbutes at home:

  • 2 cups masa harina (corn flour)
  • 1/2 tsp salt
  • 1 1/4 cups warm water
  • Vegetable oil for frying
  • 1 lb shredded cooked chicken
  • 1 small head cabbage, finely shredded
  • 1 large tomato, diced
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced onion
  • Lime wedges for serving

  1. In a large bowl, mix the masa harina and salt together. Gradually add the warm water, stirring with a wooden spoon until the dough comes together and forms a smooth ball.
  2. Cover the bowl with a damp cloth and let the dough rest for 10-15 minutes.
  3. Roll the dough into small balls, about the size of a golf ball.
  4. Using a tortilla press or a rolling pin, flatten the dough balls into thin circles, about 4-5 inches in diameter.
  5. Heat the vegetable oil in a deep skillet or fryer over medium-high heat. When the oil is hot, carefully add the flattened dough circles to the oil, one at a time.
  6. Fry each salbute for about 2-3 minutes on each side, until it is golden brown and crispy. Use a slotted spoon to remove the salbutes from the oil and place them on a paper towel-lined plate to drain any excess oil.
  7. To assemble the salbutes, top each fried tortilla with shredded chicken, cabbage, tomato, avocado, cilantro, and onion.
  8. Serve with lime wedges on the side for squeezing over the top.
